STEP 1: Choose the Right Cut of Meat

Briskets are usually made from either a beef chuck or a beef plate (or brisket). Briskets are usually around 10-12 pounds, and the ideal size is about half of that. If you have the room, go with a larger cut.

When buying a brisket, choose one that’s in great shape and has lots of fat. A good cut will be firm, but not hard or chewy. You can feel the fat by holding the brisket up and wiggling it around.

If you’re buying whole, make sure to buy a double pack. They’re more expensive than buying a single pack, but they’re easier to cook and require less work to do so.

STEP 2: Buy a Great Smoker

The best way to smoke a brisket is on a charcoal grill. You can buy a cheap electric grill that’s capable of smoking (or you can use a cheap gas grill with the grill hood removed).

I also recommend you buy a chimney starter to light your coals faster. This is a small, easy-to-use device that can hold about 4 pounds of wood.

STEP 3: Buy Some Wood Chips

The key to good smoked brisket is having good-quality wood chips. If you don’t want to spend the money on quality chips, then go with any kind of fruit or vegetable wood. They’re often very cheap and will work just as well.

You’ll want to get at least 2 bags of chips. One bag should be for the first hour or so and one bag should be for the last hour or so.

STEP 4: Put the Wood in the Chimney Starter

To smoke a brisket, you need to light your coals using the chimney starter.

Start with two-and-a-half to three-quarters of a bag of chips and light them up. You’ll need to keep adding more chips over the next half hour.

Keep checking the coals and add more as needed. Don’t worry about burning too much of the chips. You want them to smolder, not burn completely.

After about an hour, turn off the chimney starter and put the remaining chips on the coals.

STEP 5: Check the Temperature

You want to start at about 225°F. You can check the temperature using a meat thermometer.

You want to maintain a temperature of about 200°F for the first hour, and then you want to drop it to 180°F for the final hour.

Once you reach 180°F, you’re ready to cook!

STEP 6: Cook the Brisket

The brisket is going to be very juicy. I recommend placing it directly over the coals in the smoker (on a grate) rather than on a rack or over a drip pan.

It’s important that the brisket be on the coals for about 20 minutes before you place it on the grill or in the oven. This will allow the fat to melt and give you a better sear.

Cook your brisket for 1 hour. Then lower the temperature to 180°F and cook for an additional hour.

Turn the heat off and let the brisket rest for at least 15 minutes before slicing.

STEP 7: Make Sure to Slice Thinly

This is probably one of the most important steps. If you cut the brisket too thick, you’ll end up with dry, chewy meat. You want the meat to be as thin as possible.

For best results, use a meat slicer or an electric knife.

STEP 8: Wrap the Meat with Foil

After you slice the brisket, wrap it in foil to keep it warm while you’re finishing it.

You can either just put it on the grill or in the oven. Either way, don’t forget to turn off the heat!.
